Madeline Gibson Nutrition: The origin story


When I got the news that my husband, who is in the Marine Corps, received orders to move to Okinawa in summer 2025, I was not 100% thrilled. While the idea of seeing this beautiful island and experiencing life in Japan was exciting (and I was definitely set on moving to Japan with him), I had just spent the last 4+ years of my life shifting my career from chemical engineering towards food and nutrition. I was finally done with school, halfway through my dietetic internship, and looking forward to diving back into my career when I finished my training in May 2025. So I was disappointed to be moving to Okinawa right then because it meant fewer food & nutrition job opportunities just when I was finally ready to apply for them.


I talked with my peers and mentors about the situation and emerged feeling better (thank you for listening 😅 ) . Turns out, there are some nutrition jobs and volunteer opportunities to be found in Okinawa after all. But also, I started to view the move as an opportunity to just experience new things and see what happens. "There's more to life than work," many people advised - "Enjoy living in Okinawa!" And though the adjustment period was and still is a little rough, I have been doing just that: enjoying exploring the island, learning Japanese (very slowly but surely), traveling to nearby countries and the rest of Japan, and leaning in to the energetic volunteering scene, very welcoming military spouses' clubs, and really great swimming and running weather.



Still, I wanted to stay connected and contribute to the food and nutrition field even if traditional job opportunities weren't immediately available. That led me to think more seriously about starting a nutrition business. It was something that I never really seriously considered during my training because I thought it would be just too difficult to make happen; I don't think of myself as much of an entrepreneur. But I did enjoy working with nutrition counseling clients during my internship, and this season of change presented a chance to dig in and actually explore the possibility of starting a private nutrition coaching practice. With that in mind, and with encouragement from my mentors, friends, and family, I started looking into my options. Since landing in Okinawa in July 2025, I've spoken with several lawyers, attended an amazing entrepreneurship seminar for military spouses, made friends who are already small business owners and leaders here, attended a transformative seminar on content creation, asked a marketing friend to help me with a logo, and started to try some new things. I launched my newsletter in October and knew I wanted to try to get set up to offer nutrition coaching eventually. So I kept working on that goal, and here we are!

My mission & philosophy


The mission of Madeline Gibson Nutrition is to help people create nutrition & health goals and then take sustainable steps toward meeting those goals — offering a trusted sounding board and the tools needed to make real change. I aim to work with clients to bridge the gap between the scientific evidence and everyday choices so that balanced living is accessible to every client, no matter where their starting point is.


My nutrition coaching principles:

  • Treating each client as the expert of their own body

  • Supporting each client in their progress towards their specific health goals

  • Encouraging gentleness and self-compassion

  • Translating nutrition science into actionable steps that work for busy lives

  • Building confidence in moving toward healthier nutrition habits

My services


I offer three categories of nutrition services. At this time, I can only provide paid counseling services to people who are in Okinawa (SOFA status) or in Tennessee, but I hope to expand to other states in the future. (Anyone is welcome to attend my free classes, though!)


  1. Group nutrition coaching program:


    Titled "Making and Meeting Your Nutrition Goals," my 6-week group coaching program will get you focused and progressing toward the healthier habits of your choice.


  1. Individual nutrition coaching:


    Working one-on-one with clients is fun and rewarding, and I am looking forward to doing it again through my personalized nutrition coaching. I offer standalone sessions plus 4-session bundles (at a discount).


  1. Consulting for food-based businesses:


    As a dietitian with an industry background, I have a balanced perspective that lends itself well to working with food-based businesses. I can help with nutrition-related marketing research, supplier vetting, label claims verification, and more.
